This complex combination of spices and other elements are what makes the curry rich and likeable all around the world. When you are cooking a curry, you have to understand that there are two factors that have to be remembered. The first one is essential which is the base. Here is an easy curry recipe for you to satiate your cravings.

3 tablespoons vegetable oil or ghee (clarified butter)
Ground cumin seed – grounded
Ground coriander seed- grounded
1 medium onion – finely chopped
4 cloves garlic – peeled and turned into paste
1.5-inch piece ginger – peeled and turned into a paste
1/2 teaspoon turmeric powder, curry powder, salt
2 mild fleshy green chillies – deseeded and chopped
1 medium tomato- finely chopped
5 tablespoons tomato puree or 1 tablespoon (14.8 ml) concentrated tomato paste mixed with 4 tablespoons water
Assorted vegetable or protein.
Take a deep utensil and pour some ghee or oil in it. Let it heat. When the oil or ghee is heated, add the chopped onion and fry it until it’s golden brown. Add the chopped tomato and cook until the tomato is softened. After the tomato has softened and started to lose its skin, add the ginger garlic paste, grounded cumin and coriander powder. Add turmeric powder, salt and a bit of tomato paste or tomato puree and cut chilli to your suitings. Cook until the oil starts to separate from the curry base. Add some water in order to let the base cook. When the aroma fills up the room, understand that the base is cooked.
When the base is cooked, add the protein of your likings. You can add either chicken, lamb, fish or any kind of vegetable you like. After adding the protein or the vegetable, stir the whole thing so that every piece of meat or veggie is coated with that gravy base. After that, you can add water.
Let it simmer on low heat so that the protein or veggie can cook and become moist and juicy. If you see that the gravy is not that thick, you can add a thickening agent like cashew paste, cream.
If the spice is too much to handle you can add a bit of yoghurt to cut through the richness and cool down your palate. Let it cook for 30-40 minutes till the protein is cooked properly. After that stop cooking.
How to cook Naan:
Take some regular flour and add one cup of milk, yoghurt, a little of the oil and knead it until it is mixed thoroughly. When the dough is kneaded, keep it aside and let it rest for 30 minutes. After that make small balls out of the dough and try to roll it out.
Take a pan and put it on medium heat. When the pan is heated, put the rolled out dough in the pan and cook it until you see some bubbles and browning around the edges. Once you see them, turn the naan around and cook the other side. When both the side is cooked. It is ready to be served.
